Sliced Peppery Potatoes
Ingredients
3 medium russet potatoes, scrubbed
1-1/2 teaspoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon grated lemon peel
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon hot red pepper sauce

Directions
1 Preheat oven to 450o F. Spray a baking sheet with vegetable cooking spray.
2 Using a small, sharp knife, slice each potato crosswise into 1/8-inch-thick slices.
3 In a large bowl, combine oil, thyme, lemon peel, salt, black pepper, and hot pepper sauce. Mix well. Add potatoes; toss to coat.
4 Arrange potatoes in a single layer on prepared baking sheet. Bake potatoes, turning once, until golden brown, about 20 minutes. Place potatoes in a serving bowl. Serve immediately.
